Water. New York's downtown Ritz-Carlton claims to be the first restaurant in the united States to have a water sommelier. and what exactly does a water sommelier do? apparently, something similar to what a wine sommelier does--recommend what to drink while you're savoring, say, duck. (In case you're wondering, the Ritz-Carlton's water sommelier suggests a light sparkling water with duck so as not to overpower the delicate flavor of the meat.) I wonder what dish goes with good old tap water?
