Umami: Parmesan cheese has umami. So does roast chicken. And aparently, so does wine. In 2002, scientists finally isolated receptors for a fifth taste called umami, a Japanese word roughly translated as "savory." Umami now joins sweet, salty, bitter, and sour as another building block on which tatste is perceived.
