Brettanomyces:
Brettanomyces--or brett as many wine-savvy drinkers like to call them--are strains of wild yeasts that give wine a distinctive aroma and flavor that's been compared to barnyards, horse blankets, mice, and even Band-Aids. While none of those things sound very appealing, in fact, wines with a low level of brettanomyces (emphasis on the low) are often found to be complex and intriguing. In particular, pinot noirs, especially red Burgundies, often have a touch of brett.
